How to Keep Your Glasswasher Clean

All manufacturers provide manuals with their glasswashers with instructions on cleaning. Generally, all you need to do is empty the machine fully at the end of every session and rinse out the filters. Once a week, replenish the water softener – and once a month, descale the machine. Keep it properly maintained.

Is That Enough?

In a catering business, whether it’s a small café, a big pub or a high-end restaurant, the glasswasher is one of the most important pieces of kit in the kitchen. You rely on it to clean your glassware quickly, safely and to a high standard. If it breaks down or fails to do the job properly, you have a big problem.

A dirty glasswasher will give you dirty glasses, which is not only unhygienic but your customers will notice too. It’s more likely to break down too, with all the trouble and expense that involves.

If it has been properly maintained, cleaning should not be a big job, but if it hasn’t, you need to tackle it. Check the owner’s manual first for the manufacturer’s suggestions and to ensure you are following their advice on the correct dosage of detergent and rinse aid. Run it through on a hot cycle, then use an old toothbrush to clean in any crevices or hard-to-reach corners, and run another hot cycle with a glasswasher sanitiser.

Keep an eye out for limescale – most areas of the UK have hard water, so your glasswasher needs a water softener, but if you notice white deposits in your machine, you may need to increase the dose. Limescale will cause your machine to break down if you let it build up.

Still Not Enough?

If you’re still getting poor results, consider buying a new machine – an expensive outlay, but when you consider the potential cost of a breakdown, probably worth it.

There are so many models available for every type of catering business, so you need to work out which features are most important for you – low running costs, noise insulation, heat insulation, low temperature programs. There is useful information to help you choose in The Caterer magazine or from a reputable supplier of commercial glass washers such as

Some machines even have self-cleaning programs, so you may never have to clean your glasswasher again!
